After days of leftovers and Grandma's it was back to the grind tonight. Weeknight dinner. This is the one that usually trips us all up and what inspired the blog...what to make for dinner?
I pulled pork chops out tonight. In the summer I would have slapped those babies on the grill, but in December I must turn to my indoor cooking.
Nothing fancy here...oven baked pork chops, salad, and applesauce. Tonight was a quick 30 minute meal.
Crank the oven to 425
Thinly coat your pork chops in a mixtue of mayonaise, salt and pepper. Then dip in a mixture of breadcrumbs and Paul Prudhomme's Poultry seasoning (awesome stuff). Coat entire pork chop in bread crumbs bake in over for 25 minutes, or until browned.
Serve with your favorite side. Applesauce acts as a great trick to get kids to eat meat. I show my kids that they are "allowed" to dip the meat in the applesauce. It is amazing to watch them scarf it down.
