Catch-up, Catsup, Ketchup...


The kids are down for a nap at the same time.  A small miracle.  I am determined to get completely caught up...so look out.

Pizza Night!!!  Several weeks ago now, Aunt Sassy came by for a night of fun in the L house.  We made homemade pizza and cookies.

There is something so fun and special about making homemade pizza.  I have been trying to find a good dough recipe forever!  I can't tell you how many I have tried.  This recipe is from the Williams Sonoma Kids Cookbook.  We LOVE it.  The kids get into and it becomes a family activity...great friday night = kids movie and homemade pizza.

Pizza Dough

1 cup warm tap water
1 package dry yeast
4-5 tablespoons corn meal
4 1/2 tablespoons olive oil
1 teaspoon salt
2 1/3 cups of all-purpose flour (extra for kneading)

In a large bowl add dry yeast to the warm water (115-124 degrees).  Let stand 5 min or until foamy.

Add 3 tbsp. corn meal, 2 tbsp. of olive oil, 1 tsp. salt, and 1/2 flour to the yeast and water.  Beat until smooth.  Add the remaining flour a 1/2 cup at a time.  Beat until a soft dough forms.

Sprinkle work surface with flour.  Knead the dough about 10 minutes.  Form large ball with dough and place in a lighlty oiled (spray Pam) bowl.  Cover and let rise in a warm place until it doubles in size (about 1 hour).

Split dough into at least 4 even balls.  Roll dough out to desired size.  Sprinkle pizza stone with cornmeal.  Place dough on stone. 

Top as desired starting with sauce.  Brush crust of the dough with olive oil. 

For a different pizza this time around we did some traditional and some pesto chicken pizzas.  I used store bought pesto and chicken tenders.
