Sorry it has been so long everyone. The holidays swept me away to the kitchen! I have a list though of all that I was cooking and quite a few pics.
Do you remember cheeseburger pie from your childhood? My husband was practically raised on it. I needed an easy dinner that could transport for a friend that steered clear of most vegetables :)
1 lb lean (at least 80%) ground beef
1 large onion, chopped (1 cup)
1/2 teaspoon salt
1 cup shredded Cheddar cheese (4 oz)
1/2 cup Original Bisquick® mix
1 cup milk
2 eggs
1. Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
2. In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in salt. Spread in pie plate. Sprinkle with cheese.
3. In small bowl, stir remaining ingredients with fork or wire whisk until blended. Pour into pie plate.
4. Bake about 25 minutes or until knife inserted in center comes out clean.
I love that like my basic quiche you can take this recipe and mold it to your mood. Add salsa and taco seasoning for kick. Use whatever meat, veggie, and cheese combination you like...feta with roasted red peppers, blue cheese, walnuts, and cheeseburger, artichokes, chicken and swiss...the possibilities are endless and kids usually eat them right up because it is mainly eggs.
I served it with some oven roasted potatoes with balsamic. Simply clean and chop red skin potatoes mix with Balsamic or Italian dressing, microwave on high for 15 min or until tender. Finish in oven under broiler for crisp. Or mix potatoes with seasoning salt, butter, and fresh parsley. When broiling I put the potaoes on parchment on my stone baking sheet...Enjoy!
